This is a field presence/absence observation tied specifically to the offshore winter-spawning aggregation, not a lab preference test or a claim about the species' full thermal range — sheepshead are caught inshore across a much broader span, and GSMFC, FWC, and SC DNR sourcing independently confirms only the qualitative pattern that adults leave estuaries for offshore structure during cold periods, without giving numbers.

In the one quantitative offshore study, pelecypod (bivalve) mollusks occurred in 74.2% of stomachs at 10.4% of volume and barnacles in 71.0% at 3.0% of volume, with amphipods in 64.3% at 0.4% - so mollusks lead crustaceans by volume while barnacles lead by frequency, and the two classes are close and habitat-dependent. Northeastern Gulf sampling during reproductive periods found crustaceans, mollusks and plant material dominant, with barnacles, stone crabs and oysters the leading identified prey. Important caveat: the two largest prey groups by volume in that offshore study were bryozoans (80.6% frequency, 37.5% volume) and ascidians (61.3% frequency, 30.2% volume), and neither has a class in the closed forage vocabulary - so this field structurally understates the diet. Seagrass, algae and detritus are also eaten and are likewise unrepresentable. Capacity is not a current bait event.

Telling it apart

Identification

Greenish-yellow to grayish or silvery, with dark vertical crossbars that are strongest in smaller fish and fade somewhat with size.

What to look at

  • Five or six dark vertical crossbars on the side over a silvery to greenish-yellow or grayish ground. Gulf populations west of Alligator Harbor, Florida have been reported with only five bars on one or both sides.
  • No barbels on the lower jaw - this is the character that separates sheepshead from a barred juvenile black drum.
  • Four broad incisor-like teeth on each side of the front of the jaw, backed by rows of molar-like grinders. The teeth are visible from outside the mouth and are the single most distinctive character.
  • Blunt snout with a small, nearly horizontal mouth.
  • Dorsal and anal spines are stout and sharp; the gill covers are sharp enough that agency sourcing warns about them at cleaning.
Average adult length
Maturity is reached quickly - age 2 in the northeastern Gulf, with other sourcing giving a 2-5 year range. Typical fish are around 13-14 in.

Agency sourcing describes catches typically around 13 in; a state agency account gives typical specimens at about 14 in and 3 lb, and a museum source gives 14-18 in and 1-8 lb.

Sources differ. The all-tackle world record is given as 9.63-9.66 kg (about 21 lb 4 oz) at 657 mm fork length from Louisiana. Maximum observed sizes in regional studies ranged from 522 mm FL in northwest Florida to 580 mm FL in Georgia, and a northeastern Gulf study gave 507 mm FL. FWC states the species reaches up to 36 in; a museum source gives almost 30 in and 22 lb. The Florida state record is 15 lb 2 oz and the South Carolina record 16 lb 6 oz.
Longevity
Reported maximum age varies strongly by region: 15 years in northwest Florida, 18 years in the northeastern Gulf, and 26 years in South Carolina, with a state agency account giving about 25 years. Growth is rapid for the first three to four years, reaching roughly 80% of theoretical maximum size by age 5, then slowing sharply.

What it gets confused with

Black drum (juvenile)
Juvenile black drum carry four to six dark vertical bars and are routinely mistaken for sheepshead. Black drum have chin barbels on the lower jaw and sheepshead have none; black drum have a subinferior mouth and no incisor teeth; and black drum reach far larger sizes. Barbels are the reliable check.
Atlantic spadefish (Chaetodipterus faber)
Also deep-bodied and barred, but with a much shorter snout, a rounder body outline and greatly enlarged dorsal and anal fins. It lacks the sheepshead's incisor dentition.
Pinfish (Lagodon rhomboides)
Another sparid on the same structure, but far smaller, with faint vertical bars, a yellow-and-blue cast and a dark shoulder spot rather than bold black crossbars. Not resolved in detail by the sources consulted - treated as a partial entry.
